lingers in the mouth and body. Like other beans, Petai beans have complex carbohydrates can also cause strong-smelling flatulence.

Yongchaak
Depending on the country of origin they may be labeled ''Peteh'', ''Petai'', ''Yongchaak'','' Zawngah'',
''Sataw'', or ''Sator''.
Petai is a beautiful large tree of the genus Parkia in the family Fabaceae. Petai leaves
are delicate multi-pinnate lacey looking similar to Monkeypod leaf. Leaves have feathery appearance due to small leaflets. Leaves alternate, compound, with 2-5 pairs of glossy
leaflets.
The Petai tree can grow to about 90 feet (30 meters). Parkia speciosa Hassk. is a Southeast Asian legume of the Mimosae
subfamily, attains a height of 1530 m and diameter of 50100 cm, and grows at elevations of up to 1,500 m, with best performance from 500 to 1,000 m.
Stink Bean Tree
Petai bears long, flat edible beans with bright green seeds the size and shape of plump almonds
which have a rather peculiar smell, characterized by some as being similar to that added to methane gas. Like asparagus, Petai contains certain amino acids that give a strong
smell to one's urine, an effect that can be noticed up to two days after consumption.

Petai beans are popular in Laos, southern Thailand, Burma, Malaysia, Indonesia, and northeastern India,
and are an acquired taste.

The Petai tree bears flowers in a light-bulb shaped mass at the end of long stalks. The flowers secrete a nectar that attracts bats and other pollinators. The tiny flowers mature
and die. Long, twisted, translucent pods emerge in a cluster of 7 or 8 pods. When Petai pods are mature, within them will reside the petai beans or seeds. Flowers bat-pollinated,
seeds smell of garlic, very popular and fruit/seeds sold in markets.
White flowers borne in heads hanging from stout green stalks up to 50 cm long. Pods hang down from heads in
bunches.

Petai beans or seeds look like broad beans. Like mature broad beans, they may have to be peeled before cooking.
They are best when combined with other strongly flavored foods such as garlic, chili peppers, and dried shrimp, as in "sambal petai", or added to a Thai curry such
as Thai Duck Green Curry. When young the pods are flat because the seeds have not yet developed, and hang like a bunch of slightly twisted ribbons, pale green, almost
translucent. At this stage they may be eaten raw, fried or pickled.

Young tender pods with undeveloped beans can be used whole in stir-fried dishes. In Manipur, a north-eastern state of India, the seeds or the bean as a whole are eaten by
preparing a local delicacy called ''Iromba'' or ''Yongchaak singju''.
When dried the seeds turn black. In Indonesia, Patai is very popular in the highlands of Java, Sumatra, especially among
Batak, Minangkabau and many other people in different cultures of the island.
Seeds are also dried and seasoned for later consumption.

Ingredients: 1 cup of petai beans 2 onions, cut into wedges 4 cloves garlic, minced 6 dried chilies, remove seeds and soak in water for 10 minutes
1/2 chicken breast, cut into 2 cm slices
2 tbsp. cooking oil
1 tsp. thick soy sauce 2 tsp. soy sauce, or to taste 1/2 tsp. sugar, or to taste (a dash of salt, or to taste) 1/4 cup water
1/2 tsp. corn flour water
Heat oil in wok. Add garlic and stir till fragrant. Add onions and dried chilies and stir till fragrant. Add
chicken and stir for 2 minutes. Mix the thick soy sauce, soy sauce, sugar and water and pour into wok. Stir for another 2 minutes. Add the petai beans and stir for another 2
minutes. Dissolve corn flour in a little water, pour into the wok and stir until the gravy becomes thicker in consistency. Remove from wok and serve with rice. For an extra dose of
spiciness, add chili padi together with the dried chilies.

Ingredients for pounding: 12 shallots 4 cloves garlic 2cm section turmeric 6 stalks lemon grass, finely sliced 3 red chilies
5 tablespoons tamarind 1/2 small bowl of water
150g prawns, shelled and deveined petai beans from 6 pods
4 tablespoons cooking oil 1 teaspoon salt 2 tablespoons sugar 1 small bowl of water
Pound the lemon grass, turmeric, chilies, shallots and garlic until fine. Heat oil and fry the pounded ingredients until fragrant. Mix the
tamarind and water, sieve and add together with the bowl of water and let simmer. Add petai beans, sugar and salt. Add prawns when about ready. Remove when the prawns are
cooked. Serve with rice.

My stores' combined shipping is built in for same items rather than a varied
selection. Domestic S/H includes postage, USDA certification and inspection, proper packing and delivery to Airport for
prompt delivery. I can't really change any of these. If you want one of this and one of that, it is hard to discount
much as each different species requires it's own prep, packing, then at USDA each has to be unwrapped and inspected
then repacked. USDA requires me to clean and prepare every last piece before we drive them to the Inspection Station on
the other side of the island. It takes my wife and I, 2-3 days to pack items and get ready to ship. The whole next day
we drive around the island and get inspected (2-3 hours), then drive to the Airport Post Office to drop off. It takes
the same work with the same type item if you can understand.

When you order a plant we assume you are prepared to care for it. It is your responsibility to know how to care
for the plant. Do some research before they arrive or seek experienced help.
Small plants need protection from many things, wind, sun, dry-out. They do well just in the garage or living
room. They need good light but not sunlight (full sun will burn small plants). Small pots dry-out easily. Just sitting in a shallow tray of water works
well. The idea is to keep the plants from dehydrating.
Be careful if you decide to re-pot.
Re-potting voids any warranty. Plants are easily damaged with new/different mix. Use NO fertilizers (this may kill your plants).
Proper care is critical upon arrival.
Live Plants are NOT GUARANTEED
to survive under your care. DO NOT expect any live plant to be GUARANTEED to remain alive. Plants are NOT GUARANTEED TO SURVIVE after you begin Care! Live arrival is guaranteed,
eternal survival is up to you.
IF YOU are NOT able to provide PROPER CARE, PLEASE DO NOT EXPECT plant to be GUARANTEED after it perishes.
NO REPLACEMENT WILL BE CONSIDERED IF YOU HAVE REPOTTED THE PLANT.
